This is an outragiously rich and delicious holiday treat. Try it and don't be afraid..Follow the directions and realize it has a bit of a twist that actually makes it a truly unique, English dessert.
Serves 6
Ingredients
(6oz) dates, stoned and chopped
1 tsp baking soda
(½pt) boiling water
(2oz) butter
(6oz) sugar
2 eggs
(6oz) self-raising flour
1 tsp pure vanilla extract
For the sauce:
397g can Carnation Caramel
You will also need:
A square cake tin, 18cm (7”), greased and base-lined with baking parchment or 6 individual greased oven-safe coffee cups or deep ramekins
Method1.Preheat the oven to 350.
2.Mix the dates and the baking soda. Pour the hot water over and leave to soak while you make the batter. Whisk together the butter and the sugar, then add eggs, one at a time, beating well after each addition. Fold in the flour, and then stir in the date mixture and vanilla. Pour into the prepared tin or ramekins.
3.Bake in the centre of the oven for 20-25 minutes for individual portions or 40-50 minutes for the square tin, until cooked (test with a skewer).
4.For the sauce: spoon the caramel into a microwave safe bowl and heat for about 1 minute. Cut the pudding into squares for individual servings, and pour over the warm caramel sauce.

Holiday Spirit!

The town of Cape May, not too far south from here, is full of beauty, tradition and holiday decor this time of year. Go and take the tour on foot or by horse drawn carriage in the evening and visit the beautifully decorated Victorian homes. The hospitality and warmth of the Innkeepers is as enchanting as the elaborately decorated homes. The Ebbitt Room, in the famous Virginia Hotel, has some of the freshest, most delicious food around. Their sticky toffee pudding is not to missed for dessert. It is romantic and a favorite of mine and my husband's. Thank you Cape May for keeping the tradition and magic of a true Christmas alive!!!

This time of year, especially Thanksgiving, fills me with so much happiness and sadness combined. I miss those who made all my holidays so special especially my Dad and Mom, feel for those not able to have anywhere to go and at the same time am overwhelmed with the goodness, love and family God has blessed me with..I am joyful, grateful and full of thanks.
