A Great Surprise~

Last night while I was to meet my daughter in Center City for dinner, she first surprised me with an appointment for a facial! Just what I needed after a tiring and stressful week. She knows me and it was perfect. Everyone should have a thoughtful daughter like this. We went to Rescue,a fabulous spa, right in Rittenhouse. The Christmas lights, festive mood in the city and our wonderful dinner at Parc after, made it an evening at Christmas time I will never forget....

Gals and Gnocchi

Last night we met, the Cooking Group gals that are my friends for life! We always have fun, support each other and naturally talk about our grown kids. We share what is good about friendship...Trust. Last night we also shared some good ole gnocchi chat. Two of the group ordered them. Well let's just say gnocchi and the making, eating and appropriate time to cook them was a big topic of conversation that left us all laughing.The Gnocchi last night has seen better days and we'll leave it at that. I went searching for a simple "how to" and found they are so easy, not hard to try and almost hard to mess up.

Sticky Toffee Pudding, best dang dessert you WILL ever eat...
This is an outragiously rich and delicious holiday treat. Try it and don't be afraid..Follow the directions and realize it has a bit of a twist that actually makes it a truly unique, English dessert.
Serves 6
Ingredients
(6oz) dates, stoned and chopped
1 tsp baking soda
(½pt) boiling water
(2oz) butter
(6oz) sugar
2 eggs
(6oz) self-raising flour
1 tsp pure vanilla extract
For the sauce:
397g can Carnation Caramel
You will also need:
A square cake tin, 18cm (7”), greased and base-lined with baking parchment or 6 individual greased oven-safe coffee cups or deep ramekins
Method1.Preheat the oven to 350.
2.Mix the dates and the baking soda. Pour the hot water over and leave to soak while you make the batter. Whisk together the butter and the sugar, then add eggs, one at a time, beating well after each addition. Fold in the flour, and then stir in the date mixture and vanilla. Pour into the prepared tin or ramekins.
3.Bake in the centre of the oven for 20-25 minutes for individual portions or 40-50 minutes for the square tin, until cooked (test with a skewer).
4.For the sauce: spoon the caramel into a microwave safe bowl and heat for about 1 minute. Cut the pudding into squares for individual servings, and pour over the warm caramel sauce.

Holiday Spirit!

The town of Cape May, not too far south from here, is full of beauty, tradition and holiday decor this time of year. Go and take the tour on foot or by horse drawn carriage in the evening and visit the beautifully decorated Victorian homes. The hospitality and warmth of the Innkeepers is as enchanting as the elaborately decorated homes. The Ebbitt Room, in the famous Virginia Hotel, has some of the freshest, most delicious food around. Their sticky toffee pudding is not to missed for dessert. It is romantic and a favorite of mine and my husband's. Thank you Cape May for keeping the tradition and magic of a true Christmas alive!!!

Supper...everyone!
I attended restaurant week on South St. in Philly at Supper with my daughter and our 2 closest friends. The prix fix menu of beet salad, sea bass and a delicious banana bread pudding was wonderful and so artfully served. It is a lively, open kitchen restaurant in the heart of South St. and our evening was wonderful. Hope I can go back and sample the regular menu.

Fall Projects~

Love to start knitting this time of year and have a few things in mind. I just finished a cowlneck warmer in a winter white that turned out beautifully. It was quick, easy and the difficulty level for me just right. I have signed up for a few classes at FiberArts in Cape May this season. I will begin with my first Aran sweater, a classic from Ireland. My mom was such a great knitter and always a perfectionist with her work that I am driven to follow her great example. Some instuction and classes should do the trick. I will post my finished sweater and let's hope it's before next year.

We all love them. We all feel guilty having one. Well, my son just informed me about a toasted marshmallow milkshake he saw on Food Network. It is sold at Stand 4 in the village in NYC. I know I can recreate but at what caloric expense..I also recently saw a Krimpet milkshake which is a vanilla milkshake with 2 Tastykake krimpets added at the end..Not sure, as much as I enjoy a good Tastykake and the pride I have for them being a Philly based company, if I could try this. We make a basic vanilla here with good old Breyers!

Baekgaard Goods
While shopping yesterday in Ocean City with my daughter, we came across a beautiful line of leather products at P. Francis on 7th and Asbury Ave. The colorful, fun collection of purses and accessories from the Baekgaard Company are a great find for fall and early Christmas gifts. Check them out online. The Baekgaard line is owned by the famed Vera Bradley group.
Healthy Muffins (somewhat)

2 cups milk
2 eggs
1/2 cup oil
1 cup bran or flax meal
2 cups rolled oats
1 1/2 cups wheat flour
2 tbsp. baking powder
1/4 packed brown sugar
1 cup raisins or craisins
1/2 cup sunflower seeds or nuts
Preheat oven to 350. Combine first 3 ingredients. Add remaing ingredients and stir. Dip 1/4 cup batter into each paper lined muffin pan. Bake until brown for 30 mins. Enjoy. Freezes well.
Plaid of the Buffalo:)

Once only a plaid found on hunters and a now famous Woolrich wool jacket in our house, buffalo plaid has become a fashion staple. From shirts to coats, headbands, scarves and dog jackets it is a rage this season. I love the traditional black/red but seeing it is now replaced with pinks, blues and purples. Most stores are featuring these combinations for fall.
Hurricane Season

We are used to the various names that hurricanes have this time of year and keep close watch on the proximity to our coast. With the winds,rough seas and danger also comes great waves. Most surfers in our area wait all year for this. Lately my boys can be found surfing whenever they get a chance. Watching them for me is fun and exciting. The surf beaches are packed most days and as long as this lasts they will be there.

Peeps and Co....

....is a new store coming this fall to National Harbor in Maryland. I don't know anyone who doesn't love Peeps, have fond memories of them at Easter or who hasn't bought them at some point in their lives. I eat only the yellow chicks and like them stale. I would love to visit this store and hope they have Peeps slippers.

My Favorite Time of Year and Favorite Pie
My Mom's Peach Pie~
Preheat oven to 425.
2 pie crust for a 9 inch pie
9-11 ripe peaches, peeled, sliced and bruises removed
1/2 cup sugar
1/4 tsp. salt
1/2 tsp. cinnamon and nutmeg
juice of a lemon
2 tbsp. flour
1 tbsp. butter, cut up
Place one crust firmly in a pie plate. Combine next 6 ingredients and toss gently. Pour into pie shell and dot with butter. Place other crust on top, seal edges and flute. Make air vents on top. Place on cookie sheet in center of oven. Bake 40-45 mins. till top is brown. Shake a little confectioner's sugar on crust. Cool slightly and enjoy one of summer's great pleasures.

Chinese Chicken Salad (from a good friend)

4 breasts chicken,cooked and shredded
1 head iceberg lettuce,shredded
1/2 cup red onion,chopped
1/3 cup sliced almonds
2 tbsp. black sesame seeds,toasted
soy sauce
Dressing: In an airtight container pour 1 cup salad oil, 1/4 cup white vinegar, 3 tbsp. sugar, s and p to taste and combine. Chill till ready to use.
Place lettuce, onion, sesame seeds and almonds in a large bowl. Combine chicken with soy sauce and marinate for 30 mins. Add to lettuce and toss with dressing just before serving and garnish.

Mochi crazy!!

Our search for mochi ice cream during our recent New York City trip provided us with a nice amount! They are unbelievably delicious rice wrapped ice cream balls found in most Oriental grocery stores. They come in flavors such as vanilla, chocolate, mango and green tea,individually wrapped and low in calories. They are also found in most Trader Joe's. Yum!

Favorite summer drink!
I love ginger ale and always have..The new ginger ale is called "Sparkling Green Tea Ginger Ale" by Canada Dry. It is superb! I recently did a mixture of 1 can of the green tea ginger ale, a few spashes of lemonade, ice and a squeeze of lemon or lime...It is so refreshing and my staple for the summer. Try it!

Surfing
...yesterday and today the waves are there and so are my guys. With Night in Venice,our annual boat parade,the town and beaches are packed. Lucky for my boys they are over there early and getting plenty of waves and exercise. Love to watch them but will wait till next time they go.

BEST darn onion!

Take a vidalia, peel and core it like an apple, place it on a heavy duty sheet of aluminum foil, put a chicken or beef bouillon cube in the hole and a tad of butter, sprinkle a little parmesan and a bit of brown sugar plus salt and pepper on top..Wrap tightly and throw on the grill with the other items you are cooking and cook till soft about 45 minutes. Can also be done in a 350 oven for same amount of time...You got yourself the BEST darn onion!!

The phone just rang from Jimmy next door and out I go to receive a gift of a sunflower from him. He and I have a special bond. What makes Jimmy so wonderful is his outlook on life despite being in a wheelchair at 25 years old. His accident has provided many challenges for him in the past 5 years. The simple things I do each day are not there for him anymore yet he greets each day with a smile and an optimism that is incredible. He is truly a miracle like the song "Everyone calls you amazing"...He certainly is to me.

How wonderful are movies that you have watched with your Mom, friend, daughter or anyone you love. One movie,"Imitation of Life" says it all to me and will continue to comfort me whenever I watch it. The story is one of a young girl who denies her own Mother due to race. As she struggles through her life, her Mother, played by Juanita Moore, remains strong and bears the pain of this. A beautiful film that has deeply impacted me yet I never knew who played such a wonderful role. Juanita Moore is an actress I will never forget nor the memory of watching this film through the years and crying with my own Mom.

Reunited


As with most women who don't see each other for a while, we can have lunch and pick up right where we left off. The beauty of friendship. My college roommate and I have met for years, coming from different directions and spend the better part of an afternoon discussing our family, aging or the lose of a parent, old memories and mostly that we love being with each other. What a treasure my true friends are in my life!

It's a wrap!

Scarves are an accessory I never do without...My Dad used to say his neck was always cold and sometimes I think that is the reason but other times it is just a fashion statement. I never go anywhere without one except summer:) I love the pashiminas, wovens and hand knits...The scarves I have knitted for myself are special and the ones I have given as gifts are for certain loved ones in my life. I love anything to do with weddings and today's brides seem to be the most creative. I had the treat to visit a new venue, One Atlantic, in Atlantic City with Sarah. It is the most gorgoeus 10,000.00 sq. foot event space and will be completed soon. I can only say the view of the ocean and the coastline are breathtaking. We had a nice lunch at Buddakan on the Pier and can't imagine a nicer day then being invited by my daughter to join her...

A "Super" Market!
Wegman's!! It is the best grocery store and I travel an hour just to go! One of the products they sell my friends and I are hooked on, is the Ines Rosales tortas. They are a product from Spain and are a light, flaky olive oil pastry. They come 6 to a pack, individually wrapped and are delicious! Try them.
NYC by DAY
Our family loves the city, especially a quick day trip to get our fix. In the summer months, New York is so wonderful! Walking the city, finding new places to shop and eat is a new experience each time we go. One favorite spot in SoHo is The Cupping Room Cafe. They have a terrific breakfast, wonderful salads and fast,friendly service...Not to mention Anthropologie is in the next block.

Simple Summer Crisp

2 cups summer fruit or combination such as blueberry/raspberry
3/4 cup brown sugar,packed
1/2 cup flour
1/4 cup flax meal, optional
1/2 cup uncooked oatmeal
3/4 tsp. cinnamon and nutmeg
1/3 cup butter,cut into cubes and softened
Preheat oven to 375.Place washed fruit in a pie plate. Combine all other ingredients and work to make a cornmeal consistency. Place over fruit and bake for 30 mins. Serve warm with ice cream.

Fudge

....one of the truly, great summer treats. The Fudge Kitchen on the Ocean City boardwalk has the BEST fudge anywhere. Creamy, whipped in those great copper kettles and in a delicious variety of flavors. My favorites are the vanilla and vanilla nut. It is a wonderful store with an assortment of every kind of candy and chocolate. They have several locations, give out samples daily and are open year round.
Cookbook Collector

A favorite pastime used to be browsing my cookbooks, adding to my collection and giving favorites as gifts. That has changed with the abundance of great sites and blogs dedicated to the art and love of cooking. Finding lost recipes, specific categories or even recipes my Mom used to make, is now a breeze and such fun. I still collect the books and am always looking for the newest creations for fresh, healthy cooking and baking. The need to search endlessly for a particular recipe or ingredient, not necessary anymore. Some of the best cookbooks are still the Junior League, collections from a women's group or benefit and my all time favorite from our Mother's Club, "The Seashore Sampler" collection. Out of print, but for those who are lucky enough to have them, you know what I mean. Great memories and great cooks from a special time in my life!

Friendship

I spent last night with my good friend. We laughed, cried and spent lots of time discussing so many things in our lives. We have celebrated many events together and the next will be a wedding in her family. Such a special time. When you reflect on friends, friendships and relationships, you know the ones that feel comfortable, loving and fun. Treasure them. Just like the bracelets, friends bring a variety of color, style and perspective to your life. You can wear one bracelet or have a whole arm full and each one is special and has meaning! A true friend is one of the most valuable connections in your life. I am thankful for the friends I have and hope to hold onto for life!

For All Those Who Care

The Wooden Bowl
A frail old man went to live with his son, daughter-in-law,and four-year grandson. The old man's hands trembled, his eyesight was blurred, and his step faltered. The family ate together at the table. But the elderly grandfather's shaky hands and failing sight made eating difficult.
Peas rolled off his spoon onto the floor. When he grasped the glass, milk spilled on the tablecloth.
The son and daughter-in-law became irritated with the mess We must do something about Grandfather," said the son.
I've had enough of his spilled milk, noisy eating, and food on the floor. So the husband and wife set a small table in the corner. There, Grandfather ate alone while the rest of the family enjoyed dinner.
Since Grandfather had broken a dish or two, his food was served in a wooden bowl.
When the family glanced in Grandfather's direction, sometimes he had a tear in his eye as he sat alone. Still, the only words the couple had for him were sharp admonitions when he dropped a fork or spilled food. The four-year-old watched it all in silence.
One evening before supper, the father noticed his son playing with wood scraps on the floor. He asked the child sweetly, "What are you making?" Just as sweetly, the boy responded,"Oh, I am making a little bowl for you and Mama to eat your food when I grow up." The four-year-old smiled and went back to work.
The words so struck the parents that they were speechless. Then tears started to stream down their cheeks. Though no word was spoken, both knew what must be done. That evening the husband took Grandfather's hand and gently led him back to the family table. For the remainder of his days he ate every meal with the family. And for some reason, neither husband nor
wife seemed to care any longer when a fork was dropped, milk spilled, or the tablecloth soiled.
Children are remarkably perceptive. Their eyes ever observe, their ears ever listen, and their minds ever process the messages they absorb. If they see us patiently provide a happy home atmosphere for family members, they will imitate that attitude for the rest of their lives. The wise parent realizes that every day the building blocks are being laid for the child's future. Let's be wise builders and role models.
Lord, we ask not that you move the mountains, but that You give us the strength to climb. "Life is about people connecting with people, and making a positive difference"

Aloha Cake

A child could make this~easy and light
1 package angel food cake mix ( I like Duncan Hines)
1 20 oz. can crushed pineapple,undrained
1/2 cup coconut
1 tsp. ground ginger
Preheat oven to 350. Mix all ingredients together and beat for 1 min. Pour into a ungreased 9 x 13 pan and bake for 40 mins. Serve with berries and whipped cream.

Since I was young, my Mom and I shared this special treat and my daughter, Sarah, as she was growing up as well. Best Summer Recipe~Roasted Tomato Pasta

This is a truly delicious,easy and flavorful dish! Don't forget the fresh basil garnish!
1 1/2 lbs grape tomatoes
4 minced garlic cloves
1/2 cup fresh bread crumbs
1/2 cup parmesan cheese
1/4 cup olive oil
1 lb. pasta,penne,fusilli,spaghetti (cooked)
S and P to taste
1/4 cup fresh basil (optional)
Preheat oven to 400
Place washed tomatoes on a cookie sheet or in a baking dish.
In a small bowl combine garlic,bread crumbs,cheese, s and p
and spoon over tomatoes.Pour olive oil over all. Bake for 30 mins.
Serve over cooked pasta and pass the cheese.
Spread a "Rumor"

Since the sun has finally come out, I drove over to the OC boardwalk. I went to the newly expanded Terry Ivory jewelry store. Lots of exciting designs, great gifts and my favorite, Holly Yashi! I came across a new grouping of earrings and necklaces called "Rumor" and bought a little piece. Very nice and inexpensive. Check it out as they also have a store in Stone Harbor. From there I went to Hula Grille and of course, Fudge Kitchen!

Get Your Ribs On!!

5 lbs of baby back ribs,split in half
2 of each,julienne,red, green, yellow bell peppers
1 large, thinly sliced Vidalia onion
6 minced garlic cloves
2 finely chopped jalepeno peppers

1 BBQ sauce recipe
Preheat oven to 325
Place a sprinkling of all vegs on separate squares foil and lay ribs on top. Place the rest of veggies on top and add salt and pepper to taste.Wrap tightly and place each packet on cookie sheet. Place in oven for 6-8 hours depending on thickness. When done remove and unwrap foil, brush on sauce and return to oven for 10 mins...Serve
BBQ Sauce:
2 tbsp. butter
1/3 cup brown sugar
2 tbsp.Coleman's dry mustard
1 large, minced garlic clove
3/4 cup ketchcup
1/3 cup cider vinegar
2 tbsp. lemon juice
4 drops Tabasco
1 1/2 tsp. paprika and onion flakes
1/2 tsp. each cumin and chili powder
1/2 tsp. cayenne
Place all ingredients in a saucepan. Bring to a boil,stir and simmer on low for 20 mins.
